In Greece there is a whole philosophy around eating and sharing food, reflected in the ancient word “symposium” meaning a convivial gathering of friends and company centered around food and drink. Dionysus, the god of conviviality, wine and food, symbolized the importance of this deep rooted practice. For the Greeks, eating with friends at a tavern or at home is a social affair dating from antiquity.
 
Join me in an intimate cooking class and get to the heart of authentic Greek vegetarian food, ingredients, techniques, history and flavours.
 
This culinary program has been designed for lovers of traditional Greek cuisine and all that it represents – the charming medieval village, the centuries old traditions, the people and their culture and of course, the great food and wine!
 
This is a week dedicated to the secrets and traditions of vegetarian Greek cookery and participants will spend many hands-on hours perfecting the skills of Greek cooking. Learn traditional recipes passed down through the family, worth their weight in gold.
 
The secret of all Greek cookery are the fresh products, seasonal fruit and vegetables that make the base of all tasty dishes. We will also learn the healing properties of herbs and how to make our own natural cosmetics with whatever is available in the pantry.
 
The dinner table is the scene of many conversations, debates and decisions; favourite foods evoke happy memories, good health and comfort. The saying that “Mediterraneans live to eat while the rest of the world eats to live” still rings true today.
 
Confident cooks can increase their repertoire of techniques and recipes whilst those with less experience can learn more basic techniques. Afterwards you’ll taste each sensational dish by sitting down to a casual Greek food feast. You won’t feel hungry after a Greek cooking class! Sit back, relax, and enjoy the journey and immersion therapy.

Guide / Holiday Course Tutor

Natalie di Giuseppe has been cooking professionally for over 20 years. Daughter of an Italian father and a Greek mother, Natalie combines the flair of Italian cuisine with the best of Greek vegetarian recipes. This weeks' group will be limited to six participants so that confident cooks can increase their repertoire of techniques and recipes whilst those with less experience can learn more basic techniques. We will cook some mainstays of Greek vegetarian cuisine but also some less usual dishes such as feta and roast garlic turnovers and sun dried tomato fritters, using tomatoes which we will bake for two days on the marble stairs in the Aegean sun.

Accommodation

What Accommodation is provided at the Centre? * 7 rooms in the hotel, one triple, one ensuite quad, four twins, (two ensuite) * Three rooms at the neighboring guest house share a common shower/toilet * Four tent spaces and some tents.

How to Find Us

The Kalikalos Centre at Hotel Martiou is located at the edge of the village of Kissos, four miles (7 km) from the sea, and 25 miles (40km) east of Volos, Greece's 6th largest city. Volos is 4 hr by bus from Athens, 2½ hr from Thessaloniki and 1½ hr by “Flying Dolphin” hydrofoil from Skiathos island. There are direct flights to Volos (VOL) via Air Berlin, Ryan air and Monarch air (from London, Gatwick and Manchester). Check out the travel page on our web site.

Our Prices

The week including full board and accommodation is 425 Euro. This price does not include flights or transport to the centre. KaliKalos is a community experience and all guests and workshop participants contribute to the daily running of the centre. In practice this amounts to about 6-7 hours/week of light work around the centre—gardening, cooking and meals cleanup.
